You may have heard about the bone broth revolution. It's a part of the culture in New York where there are Bone Broth Bars where you can buy a cup of bone broth to take away
It's not a new concept and in many indigenous cultures did not discard anything they could use. In New Zealand we have the great "Boil up" in Ireland they have Irish stews made with lamb neck and other bones. In the Chinese culture we do bone broths regularly as part of our diet and especially when feeling a little run down. My mother often cooks bone broths with pork bones and adds a few chinese herbs to improve the flavour as well as the health giving properties.
BENEFITS OF BONE BROTH
When bones are slow cooked they release the minerals into the broth and are very easily absorbed by the body. It will give you a boost of energy
Great source of minerals such as calcium, phosphorous,sulphur and silicone (Sally Fallon from Weston A Foundation)
Contain anti-inflammatory properties
Bones are a good source of collagen and due to this may reduce cellulite andimprove skin texture.
Chicken Bone Broth
2 chicken frames
Chicken drum sticks if you want some meat
1/4 cup Goji Berries, 1/2 cup Bai He Lily Bulbs
6 cups of water
5g Dang Gui (Angelica Sinesis)
Wash the herbs in water before using.
Always buy herbs from a reliable source
Use organic chicken where possible
Bring to boil some water and add bones pour off the scum. Return to a clean pan and 6 cups of water, herbs, salt to taste. Simmer for 2 hours. Add goji berries last.
Optional herbs to add are:
5-6 red dates
